O/T Wife's canning frenzy

My wife has been canning like crazy. She has already canned about 75 jars of dell pickles. She sells them at our local craft fair in the fall. She has canned about 96 small jars of different fruit, and berry jam She made 20 pints of sweet pickel slices today, my favorite. I think she is just about done (I hope) My Mother did a lot of canning also. Any of you do any canning? Stan

Stan, the wife and my Mother have canned about five dozen jars of apricots and peaches. Today they made pure apricot jelly from straight from our orchards. You can't beat the freshness and the purity of nice canned fruit.
 
My wife cans all kinds of pickles, relish, etc. We can about 120 jars of applesauce from our trees and can about 10 gallons of sauerkraut from our own cabbage each year. I don't know how to count all the tomatoes and other stuff she does. Pretty darn good for a gal from town that never did any of that stuff growing up. Maybe that expalins why I weigh as much as I do.

How big is the jar. May go up some. Assuming 1/2 pint.
 
In the "good" old days, my grandma's and several aunt's would make sweet pickles. Nobody does it much anymore. Those were always my favorite.
 
I did 252 jars last year, dill pickles, salsa, tomato juice, pears, and kraut. Freezer full of peas, green beans and sweet corn, apple pies etc. sure goes good in the winter. Just started again last Sunday for this year. My garden isn't as nice this year with the awful weather were having.
 
We home can everything. I don't think you'll find many metal cans in our pantry.

The wife went crazy last year, so we have quite a bit left. With the late planting this year, we decided to back off on the garden. I'm hoping to plant some tillage radishes in there this fall since it's so empty.

She did put up a bunch of strawberry jam, and the peach trees look like they'll be loaded this year. We'lll have enough tomato's to make a couple batches of sauce and juice.

Between canning and freezing, we pretty much live on what we raise.

I canned bread and butter's sweet gurkins and dill pickles last year. I also made about 30 pints of blackberry jam and also canned about 20 pints of pickled beets. Also froze some rhubarb and about 50 ears of sweet corn from the garden last year. So far this year, about 20 bags of broccoli and a gallon bag of kohlorabi and 2 cuttings of rhubarb.

Tomatoes are starting to appear on the vines and everything else is growing good.

dang you guys: you are makig my mouth water, show some pics and how much you want for some, how close to den, co are any of you.....being i'm not a farmer by choice......
 
My son Matt and myself have got 2 gals cut up and sugared down and just put the vinegar and spice in the 3rd one last night. Gotta wait 9 days before slicing and putting the sugar on them.

My nephew wrote a book or two on canniing. He makes jams for the local orchards. He's a substitute teacher in Delaware when school is in session. Hal

I remember by mom canning all the time - loved it when she canned cherries - usually around 100 quarts. Even more green beans, peas and carrots. She used an OLD gas stove in the basement - it was shaped so she could have 4 water baths or canners going at once. She was feeding 12 kids so none of it got sold
 
Don't can near the quantity we used to. Put up 28 quarts of potatoes last Sunday, will do more this weekend in 1/2 gallon jars. Also making lime pickle this weekend, usually over 40 quarts. Also will do venison and suasage in the fall. Haven't canned tomatoes in a number of years.
 
I wish I could convince my wife to either mow or hoe. Her garden always looks like crap this time of year because she won't hoe it (or hoe it enough) but she insists on having one.
