Wife just finished up 100 pints of salsa over the course of this week. A variety of mild, medium and hot. Bad part was we had to purchase the peppers from a farm up the road (they irrigate) since ours stopped from the heat/drought. Tomatoes are still hanging there though.
 
To bad your to far from me. I have 3 types of hot peppers and all of them are doing just fine but I do water them a lot. My tomato's on the other hand have slowed way down
 
My mom cans salsas and jams/jellies and sells down at the local farmers market. Many different varieties including several different flavor pepper jellies. Kraut will be ready next week I think. She also makes rugs on a 100+ year old loom (turns some into purses too), sells my brother's honey (6 lb. jars really attract people, but no takers yet), and some maple syrup a friend makes.

Overall she's very sucessful, and many people look forward to her products. On the final day last year she was selling by the case. She's had a few people do the same this year already. I was down there all last Saturday, and she's really got a following...
