Sweet Potato Recipes : Anybody got any

Just had a bunch of sweet potatoes given to me. The few times I baked any I just was not wowed. The wife is not into pies with them. Any good casserole dishes, stews, soup? Maybe bake them in onions with brown sugar inside of foil.

I don't have the recipes, but my wife makes soup, muffins, pancakes with them besides baking them. She also mashes them and mixes them with mashed potatoes about 50/50.

My favorite, boil with the skins on until soft, cool enough to where you can peel them, add butter, brown sugar, and some bourbon to taste, then mash them with an old-timey potato masher to make a side dish of mashed sweet 'taters.

My wife cuts them into cubes and fries them with margarine. I like 'em a little burnt.

Mom cut them in half and baked them in a glass dish with butter, brown sugar and marshmallows on top. Yum! Yum!

You can fix them any way you would fix regular potatoes and then some.
Cut them into french fries if you want.
I like them just plan baked with butter, but a little brown sugar is good too.

I think you either like them or you don't. We just bake 'em like regular spuds, then eat them with a little butter, salt and pepper. We also sauteed 3/4" slices in a frying pan with other veggies, that also turned out fine. But we just like 'em.

One of my favorite's is sweet potato casserole:
Three cups of baked mashed sweet potatoes, three eggs separated, 1/2 cup of sugar or equivalent sweetner, 1/4 teaspoon nutmeg, 1/2 cup butter, two cups milk; combine above (egg yokes), then beat egg whites until stiff and fold them into the above mix. Put about 1.5 inch deep in a Pyrex baking dish. Topping: one cup brown sugar, 1/4 to 1/2 cup of melted butter, 1/2 cup of pecan nuts, spread over potato mix and bake at 350 for 35 minutes or until done. This is nearly the same as a pie without the crust.

I like to saute some diced onion and green pepper in olive oil, then add some chunks of sweet potato along with chunks of white potato. I salt lightly and add cayenne pepper to taste (we like them a little zippy, but not super hot/spicy).

We also eat them like baked potatoes. And sweet potato french fries are the best fries ever! Also good sliced really, really thin and deep fry as sweet potatoe chips.

Love sweet potatoes!
