Local and Lost food culture

If I were to ask "What is cream cheese" most of you would think of that philly stuff.
This is what I would think of.....

This is a old time French origin farmers cheese. It has lost a lot of its favor over the years to where there is only one place I know of where you can buy it. The cheese has a acid or bitter taste but the pure sweet cream poured over the top counters the bitterness. A little added sugar and it is great.

The bread is a very common French po'boy bread. You may think it is called sub or hoagie bread but it is different.

We have many foods not common to other parts of the U.S.
Such as boudin that is nothing more than a dirty rice dish with a type of meat. But since we stuff it in a sausage casing and call it a weird name most outsiders will not want it.
We also use terms that other do not understand.
Such as
How do you want the roast beef sandwich?
"Dressed and sloppy"
What they are asking is do you want lettuce and tomato "dressed" and how much gravy if any do you want on the sandwich.

So what are some of your local foods or food terms used that most of us would not know??

Pfeffernusse...

My grandma, of German descent, always made them at Christmas.

It is a traditional German Christmas cookie. Molasses and lots of spices - plus a healthy does of black pepper - in the dough. Kind of weird tasting, but everybody always ate them since she made them. Never loved them - but I miss them... or maybe just miss Grandma.

My grandma made them. Then my mother. I loved them. Now nobody makes them. I will have to try and get the recipe and make them myself. Thanks for the memory I can almost taste them.
 
I was raised in SE Arkansas and would go to LA fairly often. I still get a hankerin for good Cajun food. Anybody that thinks you can get Cajun food from a chain restaurant is mistaken. I've never seen that cream cheese but it sounds really good. I'm not positive but I'm pretty sure I've had the bread.

We hsve a local health food here in upstate NY called Poutine..

Take some fresh cut French fries and deep fry them until they are saturated and soggy.

Douse the whole thing with brown gravy and put a generous dose of cheese curd on top.

The food police will holler but I have to admit it is mighty tasty. Large portion around here is about a pound!

If you"re in Philadelphia you can order a cheese steak "with" or "without", they"ll know what you mean. A cheese steak you buy anywhere outside the Philly area won"t be any good.

Best poutine in the world is made in a little shop in Huntigdon,Q,Canada called P-Vans.None other can touch it!

I looked online earlier... and found recipes on google.

Not sure if the same though - they actually looked like tasty little cookies... grandma's were tough little chewy things with the molasses, pepper, spice flavor. LOL.

I worked hurricane Andrew, and was assigned to Morgan City, Franklin and New Iberia area, shrimp boats came in and every little store, gas station was serving up shrimp po boys, never had one, hey I will try anything, then everyday for lunch would hit up closest place for one, then tried crayfish pie, liked it too, matter of fact I liked all the cajun food, just had trouble prounouncing last names :)
 
If you mean cold and raw with salt many times when I was a kid. Mom would give us potato slices to hold us over while making supper

We've done the salt potatoes several times. Local Wegman's store has 5lb bag with the salt included. Needs lotsa butter too.
 
Have you ever taken a biscuit and poked a hole in the side of it and filled it with syrup? Yum-Yum!!! Or maybe taken a biscuit in one hand and a green onion in the other? What a snack!!
