Vegetable beef soup any good recipes?

I have made vegetable beef soup many times, just wondering if anyone had any different recipes from the usual, beef,peas carrots parsnips potatoes etc. Just wanted to try something different thanks!
 
Add some Salsa to your recipe.

Did that to mine last time and it added a little kick to it.

Vegetable Beef Soup recipe

The best thing about this recipe is that there is no recipe. There are a 1000 ways to make this soup, some wonderful, some just so-so.

Start with a chopped onion. Saute’ in oil in the bottom of a big pot, then brown a chopped up piece of quality beef ( the better the better). Once that is done add the vegetables you like, a can of diced tomatoes and salt and pepper to taste.

Examples, Potatoes , chopped carrots, celery, and frozen mixed vegetables,

Cook on medium heat until the meat is tender and the veggies are done..

Add corn and it becomes Burgoo

Add beans and oregano ( and kale) and it becomes minestrone

Add a bay leaf to give it a unique taste

I think it is best after it sits in the frig for a day and the flavors blend.

It is hard to beat a good vegetable beef soup.
 
I believe Edd in KY just about nailed it. Everyone has their own recipe. In addition to all the vegetables that he mentioned, I add a good handful of okra. I have also heard of diced sweet potatoes being added. If you need a little more beef flavor, you can always throw in a bullion cube or two. And when I can afford it, to make it a special occasion, I actually add some beef!
Great recipes are not found in a book, they are created through experimentation.
 
Since I like it, I add pearled barley to the soup when I make it. Go to a specialty foods store or GNC or something and buy a bag of barley.
The regular grocery stores around here only sell Quaker and I will NEVER buy anything Quaker Oats Co. sells.
I use a microwave proof one cup measure and fill it half way with dried barley and then up to the full mark with water, then microwave for 2 or 3 minutes and add to the soup. Works fine.

1-can corn
1-can beans I use french cut
2-cans vegetable medely
1-can peas
1-12 oz can v-8
add barley to your taste.
also season to your taste.
heat to boil
As close to campbells as you will get.
 
In our house it ain't veggy soup until you get some cabbage in it. Usually starts with leftover roast,and taters, then start adding veggys until the pantry is empty. V8 juice is a must.
