I got this from A "Grit" magazine. Arlene Obermiller, Dansburg, Ne.
6 potatoes, peeled and cut to bite size. I use 6-8 cups cut up.
2 onions or one large, diced
1-2 carrot, cut to size
1 stalk celery sliced
5 chicken bouillon cubes (I used 1 Knorr Chicken stock concentrate)
1 Tbsp parsley flakes
4 cups water
2 Tbsp butter
1-1/2 tsp salt
pepper to taste
3-4 strips of bacon, cooked and crumbles. Could use diced ham
1 13 oz can evaporated milk
Chopped chives (optional)
In slow cooker, combine potatoes, onions, celery, carrot(s) bouillon cubes, parsley, water, salt, pepper, butter, and bacon. Cover and cook on low for 12 hours or high 3-4 hours.
Stir in evaporated milk the last hour. If desired, mash soup with a potato masher before serving. Top with chopped chives.
I'm going to try it with a parsnip in lieu of the carrots. A red onion would add a little color if desired.
I prepped my potato ground with a tractor to keep it legal.
