Calling the beet king!!

I forget who on here is the beet king.
I'm the only one in this house who likes beets. Couple weeks ago I needed some beets for a salad I was making. Wife bought a 4 pack and I used 2. So tonight I thought I better use the last 2. Will this work? I quartered them and wrapped them in foil after I drizzled them with olive oil and sprinkled them with salt, pepper, parmesan cheese. They are in the oven right now for about an hour.
 
Thats one of our staple foods when we go hunting out west. We just open a can of beets not the pickled kind and pickles sardines,beanie weenies,vienna sauage,crackers and a few other cans of stuff . We make it back to the truck for lunch eat then head out again with 2 different dogs till dusk . Thats what we eat every day for lunch on the prairie while we hunt for bout 10 days . We havent died from it yet LOL. Beets are good for you also
 
Same here. I pickle most of my beets and just leave them unsealed in the refrigerator until I eat them. Sometimes I add an onion to the jar when its opened and let it sit a few days.
 
Well just finished eating them. If you like beets, you will love them prepared like this. After you take them out of the oven the skin just brushes off.

I like beets though I have not heard an option yet that I would eat. I just boil them till done then squirt them out of the hide and eat with a bit of salt. Any other way I'd through them out the door.
 
Looking forward to beet greans and Harvard Beets. I also like them boiled and covered with butter and pepper.
