The M should have 5 forward speeds. 1 speed sounds pretty messed up. Maybe the guy never moved the shifter over and into another gear. 1 speed wow. The loader depends on the setup of the hydraulics. A standard m doesn't have power down, but my hydraulics never worked. If it has a loader on it it probably has been made 2 way. The hitch question. There is a 3pt that is made by saginaw that cost 625. SOme people even home make there 3pts. I don't know much about jds but M's aren't that hard to rebuild, tons of people do it. As long as you have money you will always be able to find the parts.
