The problem may be elsewhere than the sensor or the gauge. Depending on where the sensor is located you may not see any temperature rise with the thermostat closed. When you work the engine hard enough to make the thermostat open it may be overheating due to a clogged radiator, bad pump, clogged passages in the engine, etc.
