Sounds as if you have about the same situation that I did (40 acres to mow) except that I don't have the hills. I looked at a lot of alternatives, and the best, reasonably priced, solution that I came up with was a 300 Utility with a six-foot bushhog. By the time you overlap a bit, a five-foot mower gets nets you maybe four feet per pass, so you end up doing quite a few more passes than with a six-foot. A seven-foot is getting to be pretty big, and I worried about how much life I'd get out of one - you may be getting into a 40+ HP requirement with something that big, also. The 300 has plenty of horsepower to drive the six-foot I've got through stuff that's two- or three-feet high in second or third gear, depending on how thick it is. Problem you run into with an H or M is the hydraulics are marginal unless you get one of the supers, or some aftermarket addition has been made somewhere along the line. Most of the 300 and later utilities have this already, plus the wide front and lower center of gravity I'd want if I were moving in hilly territory. Hope this is helpful.
