Sounds like you could possibly be looking for a recipe for a marinade - they usually have oil as one component, along with an assortment of spices, and often have wine/wine-vinegar or soy sauce, hot sauce, spicy mustard etc. They are applied on meat to flavor and tenderized it before cooking/grilling. Probably at least an hour prior to cooking - sometimes longer.
But part of the marinade (make sure this portion never came in contact with the raw meat) can be reserved to serve with the cooked meat later.
