The difference is how you get to the final product. Hybrids are selectively bred to get the results you want. The genes are being modified but it's mother nature doing the work.
GMO skips the selective breeding step and just modifies the genes in a lab to get the result you want.
One way or another things are being modified. My concern with GMO is more a long term one. When you get many years of crosses released in the wild what's going to happen? It's not the short term what goes in my mouth stuff...
