Canning tomatoes is so incredibly easy!!! Peel them, cut out the cores, quarter them, and put them in sterilized jars. Put the lids and rings on, and process at 15psi for 0 (yes, ZERO) minutes. I always put a nice sweet basil leaf and a teaspoon of canning salt in mine. Easy way to peel: Fill a 10 quart pot 3/4 full of water. Bring to a boil. Gently lower tomatoes in and scald for about 10 to 15 seconds. Scoop them out with a slotted spoon, and as they cool, the skins will slip off easily with two fingers.
