The advice youv'e gotten so far is correct. I plow with an MT and the M-2 plow. The only thing I can add is that after you set the center draft, the MT's rear wheels will need to be set in in the axles about as far as they will go. I'm looking for rear weights, as pulling two bottoms in some soils can cause the rear tires to loose traction sometimes. I just gradually raise the plow a bit untill the tractor bights in and then lower the plow back to my set position on the touch-o-matic lever. In open feilds, I've been able to plow in 2nd gear. Although in small gardens I stay in first.
