If he's experienced and has done similar jobs before, then why not expect him to give you a quote for the whole job? The per hour price doesn't mean much if he's got all week to get it done and you're paying the freight. Then you could shop around a bit with his and some other quotes too. Just my suggestion, maybe the per hour deal is the way it's done around there.
