I've got an old starter with no tags. When I hook up a 12v battery to it, it spins very nicely. How do I tell whether it really is a 12v starter or maybe a 6v?

The differences are basically relative. The 6 volt starter has larger wire and usually larger brushes, but if you don't the other to compare it to, or the specs (you need to know who made it) you can just make an eductated guess. Because they have bigger wires and brushes, 6 volt starters are often better starters for 12 volt systems, if you are worried about it.
