good venison sausage recipe

Because of the snow the deer processing got delayed,I have many recipes for deer sausage,but who better to ask for a good one but here on the site? I dont like sage,and I dont like corriander,Everyone seems to like garlic and fennel,I have some good beef fat trimmings in the freezer and can get some pork shoulder easily enough,Was reading that mushrooms added to the ground venison is a good way to keep it moist while it cooks without too much fat added ,Any thoughts or opinions will be appreciated, Thanks in advance,,,Larry

Deer burger
I take 7 pounds deer and 3 pounds bacon pieces & ends ( our local Wal-Mart has the bacon ) Mix together and grind. Good taste and is not dry.
 
What can I say. Every time I try to rotate it and then save it the computer does not do as I tell it to do but you know computers they have minds of there owns or sure seem to at times
 
If you want another good Scandanavian sausage recipe here is on for popato sausage (a fresh sausage not smoked). Take equal amounts of venison,fatty pork and potatoes (Say 1 pound of each with a 1/4# more of potato for a small batch)onions(1 large) salt(I like to use curing salt, This keeps the sausage a light pink inside) and pepper to taste. Grind the meat, potatoes and onion add seasoning mix by hand well. Fry a small amount in a small skillet to make sure you have enough salt. When satisfied stuff into hog casings to desired length. Tie off ends. To cook boil in kettle of water, poke fork holes in the sausage so it will not burst during cooking, do not boil hard. It takes about 20 to 25 minutes til done. Whenever we make this everyone wants some or we have it at gatherings. This sausage freezes well. We generally only make the three pound recipe because it is so easy to make. An old Swedish recipe.
 
do you have to cook it before you freeze it,I never tried potatoes in sausage,sounds good,just wondering if the raw potato would freeze good or you cook it first?
 
You freeze the whole thing raw. Do not thaw sausage when you take it out of the freezer for the next meal. Place the sausage in kettle with cool water and start cooking process. Remember to poke the sausage so it will not burst. The sausage should not be left unfrozen after you make it for more then a day or the potatoes will get dark.It will still taste alright but will look odd. Left over sausage thats cooked can be fried and eaten with eggs.
