Try a different tractor. I had a tractor that the hyd
would slowly let the gate open. Other tractor never
did it.
That way you know it’s the baler. Have had old rusty
quick coupler tips do the same.

Thinking outside the box, would a Check valve in the close "line" (possibly from a Farmall hitch cylinder) keep it closed, then allow pressure to open

Try closing gate then disconnect hoses from tractor then bale to determine is gate will stay closed. Another test is reversing hoses in breakaway coupler then bale. It's possible gate cylinder piston seals have failed.

Try a different tractor or hook up a different implement to that tractor to isolate it to either the tractor or baler. Most likely the tractor in my experience. If it is the tractor, the valve for that remote is bleeding through.

hyd cylinders leaking past, the interlock in the system has a chunk of something in it letting it not function and not lock the gate closed or you have a issue in your tractor remote are the hyd reasons I have also seen the latches themselves get out of adjustment,, I assume you have had it a while and know how to go through a full cycle and make the system lock as per ops manual

When it happens on my NH 851 balers its the cylinders need a rebuild.
