Put the gas in first thing, that way if there are any leakes that show up while you put the water in, you will find them before sparks or the fan blows the gas around. I would just go over all connections as a double check on fuel and electrical. Look over things like the fan belt and make sure nothing is in there like a rag that the fan can grab. make sure all the tools are out of the way. Kind of do an over all check of things like you would when pulling the red flags off an aircraft. If you want to check spark just hook up an old spark plug to one of the plug wires and set it where the base of the plug will be grounded and watch it as it cranks, but I wouldn"t worry so much about that unless the engine doesn"t start after a few cranks. Just in case your post today "tempts Karma" have the fire extinguisher handy and the hose also! I would try to start it first without choke and if it doesn"t go, then choke it a bit to keep it from flooding until you get the carb set right. #1 rule is be sure it is in neutral and be safe, easy to be distracted by all the checking and anticipation. Are you going to have it at the Toulare show?, I think I may make it to that with the 23 Olds truck while I am out that way. Be neat to see a show in a different area. They use a lot of equipment out there I am sure will stump me as to what it is!
