After replacing the cylinder head gasket, what are
the correct steps to torque the head down? Do I need to retorque after starting and motor is still warm?

Alan, Torque the head to 110 ft. lbs. in stages starting from one side of the head in the middle and work back and forth across and outward toward each end of the head. I'd take them to 60 then go back and take them to 90 and then finally to 110.

After you get her started and run up to operating temp (You may have to put a piece of cardboard in front of the radiator to make her heat up), shut her down and go back. Remove the valve cover and rocker arm assembly...retorque to 110. You'll be amazed how much it will need. Then reset the valve clearances, button her up and enjoy. After about 20 hours of operation, you may want to go back and give it one last retorque.//FB
