When you have the compression at around 250 lbs will the compression blow the opposite valve open and if so what size spring should I be using?

No, the compression in the cylinder will tend to push both valves shut, not open. Stronger valve springs are used to prevent valve float at higher than stock RPM's. That is, the cam opens the valve so fast that the lifter will keep going up off the lobe of the cam and then slam back down on the closing side of the lobe plus the valve can bounce off its seat with weak springs.
