What does the plugs look like when you run it for a while under a load? Fuel being way too lean will cause the engine to get hot faster, it may not the exact problem but will help. How much water/coolant does the system hold?? I am not sure what the fan looks like in a DC, but maybe you could find a fan blade with more blades on it to pull more air through the radiator. Or add a electric fan in front of the radiator under the grille if there is enough room to fit one. I never had alot of problems with bored stroked engines getting hot, on or off the dyno, the hottest my big H runs is 150. Here is a few things to check for that may be causing heat to build faster.. Incorrect ignition timing, if it labors alot,, kinda like a car idling in gear,,, (sound) you may need to back it off a bit. Fuel too lean. even though lean conditions make good power, it creates heat, because the fire is hotter inside the cyl, more fuel will "Cool" it down a bit, while under a load. too big of intake manifold and carb when you was tellng us of the homemade intake, the heat exchange you described about carb icing, you may have a vacuum leak somewhere, especally if the plugs are white, or grey in color, that will cause it to heat up quite a bit!!
