What is the advantage of running headers over a mono exhaust system, how does it increase power
besides more flow?

One tube per cylinder is the rule for engines operated at full throttle... like NHRA fuel cars.

Headers can increase scavenging but are rpm sensitive... big short tubes are better for high rpm horespower; small long tubes are better for low rpm torque.

Pressure waves bouncing back and forth on equal length headers will push and pull exhaust particles out. It can also help scavange the combustion chambers of spent charge. It can also help maintain a higher velocity and it will equalize all the cylinders.
