Have an oliver 66 with oliver 88 sleeves and M&W high dome pistons in it and the crank is stroked 1/2 inch from stock. Had it running on straight pump gas and it knocked like a diesel. It turns out that we had 255 lbs of compression. My question is, how do you know how much of the dome to shave off to get around 190 - 200 lbs of compression? If you shave off to much then you are screwed. I would appreciate some good input here.

Sounds like you have what you need. You can buy pump fuel at certian stations that is high octane.
112 or 116, something like that. You could cc the dome and cc the head then go search the internet for one of the free calculators. You have to know the exact bore and stroke, deck height, combustion chamber cc and maybe compression height on the piston.

It would be eaiser to change gas, plugs, timing and maybe add water.
