Getting onions to keep is a problem for us too. The one in the picture has been in the crisper pan in the refrigerator since harvest. Most of our onions are diced in the blender and frozen.
The potatoes, we dig and lay on a rack in the barn, out of the sun. Then after about 5 days, remove the excess dirt with our hands and put them in cardboard boxes. If I could, I would then put them somewhere that is about 34 degrees and totally dark to store. Since that is not an option for me, they go into a spare bedroom that is not heated. My way, they have to endure more heat than they want until the weather cools down. Ours do sprout, which we periodically remove, but we find the colder you can keep them (without freezing) the less sprouts we have. If they get any light they will turn green.
