The images in your emails were probably web links.
Depending on your particular email client, you may be able to save your email in a different format that will capture the images as well.
By the way, it's a bad idea to have images load by default. Spam email usually contains an image link (often not even visible) that the spammer uses to confirm that you opened the email. Set your email preferences so that you don't automatically load images.
