I use 2# of sugar per gallon of cider from my apples for wine. Be sure to use a pectin compound specifically for winemaking with fruit. Winemakers yeast is also better. All of this stuff is readily available from any wine makers supply. I have been making wine from my own apples for many years using this method. Also use camden tablets to sterilize your containers to eliminate stray bacteria. Good luck with it, you'll have some great tasting wine from your own fruit.
