If you are already roofing, then I would say install the ridge vents. However I would keep the fans in place and use them to supplemnt the hot air removal. The motors are easy to fix, and it can be done from on top of the roof which is usually the easiest way if your house is a one story house. I fix about 3 or 4 of them a year and most of the "guts" interchange from fan to fan. I have also heard about these starting fires but I have never personally seen any of this happening.
