Pointing is taking a very thin chisel and chipping out loose and broken mortar , then repalcing and troweling in new. It goes better than you think once you get at it. My shop has a cement block chimney with a flu liner,I've never sealed it..but if I was going to I would use something like water sealer,or boiled lindseed oil cut 50% with paint thinner. If you want color then I would use latex exterior primer and apply two coats then finish coat of latex exterior.
