Like Roy say's, no reason not to eat them if they taste ok. Pork fat takes on a rancid flavor long before it posses any kind of health risk. Have your wife ask the vet about feeding uncooked pork to dogs or cats. It's supposadly risky for them to even chew uncooked pork bones.
That aside,for years now,my nickname for the "47% voting blok" is "Meat begger Hounds". Why? Because in the old days of home processing,the dogs were there snatching anything that hit the ground or became ungaurded on the tables. Amongust the usual neighborhood dogs would always be dogs we had never seen before. The strange dogs had never helped guard the farm or joined in a wildlife hunt but was right up front waiting for thier share. Far as I know,the fresh meat never seemed to harm them.
