Those Kroger butchers must have been really busy in the back. It's not like the have a side of beef they have to break down and cut out the prime rib. Everything comes in plastic bags inside of cardboard boxes nowadays. At least in any big box stores I've been in. Butchers nowadays probably wouldn't even know how to break down a side of beef. They open boxes, remove the meat from the bags and cut it into whatever steaks. Now I've heard that that is about to change. All the cutting and packaging will be done at the packing house. The steaks, roast etc. will come to the stores already packaged in gas filled packaging. Some stores already have gone to this. So stores won't need butchers anymore, just someone to open the boxes and put the packages in display. How times are changin..
