As evidenced by the replies there must be a hundred ways to serve ham and vegetables. I like to make pot roast with Boston Butt pork roast. Can be done on top of the stove or in the oven. In addition to the pork I add potatoes, carrots, onions, and a little celery. I guess you could throw just about anything you wanted to in it as well. And I'm with you on this, one dish, or pot meals are a lot easier and easier to clean up afterward.
