One of my favorite's is sweet potato casserole: Three cups of baked mashed sweet potatoes, three eggs separated, 1/2 cup of sugar or equivalent sweetner, 1/4 teaspoon nutmeg, 1/2 cup butter, two cups milk; combine above (egg yokes), then beat egg whites until stiff and fold them into the above mix. Put about 1.5 inch deep in a Pyrex baking dish. Topping: one cup brown sugar, 1/4 to 1/2 cup of melted butter, 1/2 cup of pecan nuts, spread over potato mix and bake at 350 for 35 minutes or until done. This is nearly the same as a pie without the crust.
