Isn't 5th gear in that pickup an economy overdrive ratio? With automatics we locked out the overdrive when pulling a load, even when they were new. Those trucks was never intended to charge up a hill with a heavy trailer at 1600 RPM in overdrive. If you can upshift and downshift to stay in the powerband when it's needed you may get better performance and better fuel economy than if it just lugs in overdrive.
If it helps, maybe use a tachometer and a vacuum gage to stay in the power band?
