Should work fine. My Dad had a small shed that he dried onions in. He framed a piece of wire about 4'x 6' with wooden strips and suspended it from the rafters about 5' high, therefore it had plenty of air circulation, didn't get too hot, and made it quite difficult for critters to get to them.
