I built a heated shop and use white steel roofing for the ceiling and steel roofing on the roof. Fiberglass insulation was blown in on top of the ceiling about 20 inches thick. No condensation on the ceiling because it always stayed the same temp as the heated area below it. No condensation on the bottom of the steel roof because it always stayed the same temp as the outside air and the air in the attic was the same as the outside air. You have to have good air circulation in the attic so it stays cold as the outside air As far as vents, MAKE SURE you put something up there so the snow and rain can't blow in and drip down on the insulation.
