We overwinter in the ground in the Pacific Northwest, where the temperate weather is comparable to Great Britain. More reliable if you cover with straw, but usually not necessary unless you get a cold snap (below 20° for several days). I did lose some nice beets last winter to the cold, but they were Cylindra beets that grow up out of the ground rather than being completely buried. Will harvest and can them this year. Carrots will still be left in the ground for fresh consumption through the winter.
