A few things to check...
With the engine warmed up, idled up, is the air coming through the radiator hot? If so, that proves it's circulating coolant, so the thermostat is open and the pump is pumping.
If the air is cool, feel the front of the radiator, checking the temperature from side to side. If some parts are hot, and others cold, the core is partially blocked. If it's cold all over, there is no circulation, as in closed thermostat (not likely since it's new) or the pump impeller is bad (only seen that happen once, it split and fell off. Not impossible but very rare.)
Mystery overheating usually turns out to be a bad head gasket or cracked head, especially if it was recently overheated due to a coolant leak, bad thermostat, or restricted air flow. If the coolant begins to blow out the overflow before it overheats, that's a sign of compression gasses entering the cooling system. Other signs are condensation in the oil, missing, steam out the exhaust.
