We also had what mom called "breakfast meat"....sounded better than head cheese I guess. We called it "piggy meat". My dad would split the pigs head when we butchered, scramble the brains with eggs the first day, then mom would cook the head while we processed the rest of the hog. The meat was separated from the fat and bone, dad ground it up and back into the broth it went along with a couple containers of rolled oats and his special spices. All us kids got to help with the taste testing as it was cooked up, then mom would package it up in "bricks" and freeze it. For breakfast, she would slice off 1/2" slices and fry it, mashing it to the size of a slice of bread. Then we would make a sandwich with toasted or untoasted bread...sometimes just mixing with scrambled eggs and having it with toast.
