I raised Cornish X Rock hens this spring dor two months. They grew quick and I processed them at two months (7 to 10 lbs.).
Anyway, yesterday, I pulled one from the freezer and thawed. I had just cut them down the middle and made halves before I froze them (both halves).
First night was a battered fried breast with mashed taters and green beans.
Usually, after that I would make Chicken & Dumplings. After eating my fill, there was so much I had to throw away (re-heated dumplin's really are not tasty).
Then, I got to thinkin'....What if I boiled the remaining chicken and saved the broth plus the shredded meat from boiling?
I just filled 6 quart zip baggies with about 1 cup of shredded chicken and filled to the top with broth.
By doing this, there are more meals than just throwing the leftovers away.
Heat the mixture and add noodles= Chicken noodle soup.
Heat the mixture and add Stove Stop Stuffing= Chicken Casserole.
Heat the mixture and add dumplings= Chicken and dumplings.
Heat the mixture and add.... The list goes on
I just find it amazing that 7 meals can be made from one of these chickens.
