I think you've overthought this. 40% of food is flat wasted in this country. I used to haul conventional sweet corn from the field to a processor. We'd start picking a field, get half done, and leave the rest. There were always dumpsters full of already processed cans going out to be dumped whenever I went into the plant. I also used to run a spray rig, and I sprayed sevearl fields of green beans and peas that were never picked, or half picked.
There's more than enough room for organic production. Average conventional corn yield around me is 156 bu/a. I personally know organic growers matching that average yield. I do also know conventional growers that at least claim to blow that yield out of the water. One guy I talked to claimed he was doing 300 bu/a. When pressed, he admitted that was one spot in one field. What's that got them? $3 a bushel? At least with organics you don't have to become a BTO and live off govt subsidies to stay in business.
