I haven't done it for a number of years, but we use to make tea every spring, and drink it for several months. The old saying was you could make tea in any month that had the letter "R" in it.
So I missed out as it is now May.
We usually found a smallish tree, hooked the tractor to it and pulled it out roots and all.
Many times i remember seeing my dad come in from disking or plowing with a small sassafras tree tied to the implement.
We would wash the roots off with a water hose, cut of the main parts. Then cut the roots up in approx 2" sections and lay them out to dry off. We preferred to use root sections that were at least as big around as your thumb, to maybe as big in diameter as a C or D flashlight battery.
When we wanted tea, we took a small hatchet and just split the root up into small sections. The smaller you split them, the more surface area exposed to the water. We would put a pan of water on the stove, throw a handfull of split wood into the pan and bring to a boil, then reduce to a simmer, and just let it simmer till the tea had a good reddish/brown color. Put in some sugar, dring it hot or cold.
I like it both ways. I really wanted to get some this year, I may still get some in a few days.
