In a lot of cases, it ISN'T cheaper to hire an illegal. If you have some legit employees, you are going to have to pay SS taxes, medicare taxes, etc on the illegal, too. No legit employee will let you pay cash to one guy while his check gets discounts. you as an employer will be ratted out pretty quick.
And a lot of that is why our governemnt has let it happen as long as it has. All parties know that the illegal will never be there someday to collect the benefit they are paying in to. They are, in effect, helping keep programs like SS afloat.
In many cases, there are a lot of jobs that the local "talent" just won't take. Next time you go out to eat, look who is in the back washing your dishes. When was the last time anyone saw a middle-aged guy bussing tables? If you go to a hotel, try to find someone "local" cleaning rooms. Or working at the slaughterhouse. Or milking cows or picking produce.
In many places, the immigrant (legal or not) takes the job nobody else wants- and there are plenty of those.
In case you are wondering, I employ 19 people. None illegal. We've employed 3 generations of at least 4 families. And we've had some real losers, too- just because you are local doesn't mean you don't have ADHD, do drugs, beat your wife, or have creditors looking for you.
Many farmers aren't as lucky though. They get to pick from who walks through the door. And if they need somebody, and that somebody wants to work, they put 'em to it.
