Sounds to me that if it sparks only once when the key is turned off, the points aren't opening. The key switch becomes the points.
I'd check to make sure the distributor shaft is turning, that the rub block that rides on the distributor lobes isn't broken, and that the points haven't gotten loose and lost adjustment.
