Seasoned thinner cuts of grilled chicken breast on a roll with roasted red peppers, or in the summer fresh romaine lettuce/tomato - no mayo or any of that. Grill up a bunch, there's lunch for a few days. I'll make up another favorite dish so as to alternate or have as a side. If its something I like, will have a few days in a row, then change it up.
Atlantic Salmon from the gulf of Maine - left overs, always good on a roll, you could make a tuna-fish like salad with it, but I don't like mayo so much, its the oil but a tiny bit is fine, add some Wickles relish, diced onion, fresh romaine - not bad at all.
Can't beat a beefstake tomato sandwich and you have to have some mayo (veneer coating) on that with a liberal coating of oregano. Keep the thick tomato slices separate from the bread in your cooler and make fresh before you eat. Add some bacon and fresh romaine! Takes 2 of these to satisfy though.
