I thought someone with actual experience with this pump would have an answer, and you might get a better answer on the Ford board below, but here is my generic guess...
Somewhere there is a pressure relief valve. It could be behind the fitting where the pressure line connects, or could be under a plug somewhere on the pump. There will be a spring holding the relief valve plunger against it's seat.
"If" the replacement pump is identical to, or closely resembles the old pump, you will simply swap the spring from the old pump to the new. You should see a difference in the springs. The old spring will be weaker, allowing for a lower pressure regulation.
But, there is a possibility the pressure could be set with shims. If that is the case, replace the spring and shims from the old pump.
And, it could be an adjustable setting. If that is the case, it would need to be set with a pressure gauge after it is installed.
Again, hopefully someone that has actually done it will offer their solution, there are just some guesses as to what to look for and how hydraulic pressures are typically set.
