This is really a personal preference thing and it's shown to me by the folks who use the computers in our shop. Everyone has their own favorite and we see Firefox, Mozilla, Chrome, Edge, Bing, and Explorer. I like the simplicity of Explorer coupled with Google - not Chrome as my search engine.
It sounds like you might want to disable automatic updates so you can choose what and when the updates come in. That way you can be ready for any changes they may make that you don't like. In that case you can do a system restore and dump them and start over.
I have seen lots of complaints about Chrome but I have no personal experience on it.
If you think windows 7 with IE is bad, get a brand new $700.00 Dell laptop with windows 10 on it. The absolute worst computer experience I have ever had even though its got the fastest processor, and most memory of anything we have at the shop.
