Although it's been a few hundred years since a volcano erupted on Sao Miguel, there's still a lot of volcanic activity, including hot springs and fumaroles (hot gas vents). The locals use the fumaroles to cook: They chop up meat and vegetables in a large pot, which is buried a few feet underground. Wait a few hours and everything is cooked.
You can see steam from a fumarole in the background. The ground they use for cooking is amid several fumaroles and quite hot.
