Regarding deer: I plant marigolds from seed every year. The deer never bother them, and they (the marigolds, not the deer) provide a wonderful fall-colors show up until frost. The deer also don't eat peonies, which are pretty much care-free after getting established and put on an amazing late-spring show of maroons and reds and pinks and whites and mixes of white and pink. I've had good luck with cannas, too, which make a dramatic statement at maturity with their 6-foot-tall leaves and brilliant red blooms (but their tubers need to be dug up and stored inside each fall in colder climates).
