Canada has millions of untapped trees. The OPEC of maple syrup; Quebec Maple Syrup Producers; controls the production and store any excess to keep the price artificially raised. Now that the demand is high enough it will not affect the price; and they got caught with their pants down by not having enough supply to meet demand this year; they will release some of the lower priced reserves into a high priced supply chain to stabilize the market. They will just tap more trees next year to replenish the reserves.
Basically the same way cane sugar supply chain works.
